One of the best things about this recipe is that the slow cooker does most of the work. Add everything to the crock pot in the morning, and by dinnertime, you’ll have tender slices of beef with plenty of savory onions and gravy.
This recipe makes enough steak to reserve half for another meal. I love recipes that help me get a head start on dinner for the following night!

Ingredients
This is a list of the ingredients that you need to make your grocery shopping easier. You can find the full list of the ingredients and amounts needed in the recipe card at the bottom of this post.
- Flank steak: This lean cut of beef becomes tender when cooked slowly. Cutting it across the grain before serving is important for the best texture.
- Onion: The chopped onion creates a flavorful base for the beef and softens as it cooks.
- Canola oil: The oil helps the garlic and seasonings stick to the steak. Avocado oil or olive oil can also be used.
- Garlic: Fresh minced garlic adds savory flavor to the meat.
- Oregano: Dried oregano gives the steak its Greek-inspired flavor.
- Salt and black pepper: These simple seasonings bring out the flavor of the beef.
- Cayenne pepper: A small dash is optional, but it adds a pleasant hint of heat.
- Beef broth: Use low-sodium broth so you can better control the amount of salt in the finished dish.
How to Make Slow Cooker Flank Steak
This is a quick overview of the step-by-step instructions for making this recipe. You can find the complete list of instructions in the printable recipe card at the bottom of this post.
- This easy crock pot dinner takes only a few minutes to assemble.
- First, place the chopped onion in the bottom of a 5- to 7-quart slow cooker.
- In a small bowl, stir together the oil, minced garlic, oregano, salt, black pepper, and cayenne pepper, if using. Rub the seasoning mixture over both sides of the flank steaks.
- Place the seasoned steaks over the onions, and then pour the beef broth into the slow cooker.
- Cover and cook on low for 8 hours or until the meat is tender.
- Transfer the steak to a cutting board and let it rest briefly. Slice it thinly across the grain, reserving half of the meat for another meal if desired.
- Serve the remaining steak with the tender onions and some of the cooking broth or thickened gravy spooned over the top.
What To Serve With Greek Flank Steak
If you are looking for delicious dishes to pair with your meal, try serving it over a bed of no drain mashed potatoes or mashed cauliflower. You can also add a simple vegetable side dish such as green bean salad or baked zucchini.
Substitutions and Additions
- Replace canola oil with avocado oil or olive oil.
- Add sliced mushrooms for extra vegetables and savory flavor.
- Add a little rosemary or thyme along with the oregano.
- Use smoked paprika instead of cayenne for flavor without as much heat.
- Replace some of the beef broth with dry red wine for a richer sauce.
- Add a splash of fresh lemon juice before serving to brighten the Greek-inspired flavors.
How To Store
Refrigerator: Store the cooled steak, onions, and gravy in an airtight container in the refrigerator for up to 3–4 days.
Freezer: Place the steak in a freezer-safe container with some of the cooking liquid to help keep it moist. Freeze for up to 3 months.
Reheating: Warm the steak gently in a covered skillet over low heat or in the microwave. Add a splash of broth if the meat or gravy seems dry.
Sandra’s Pro Tips For Crock Pot Flank Steak
- Cook the flank steak on low for the most tender result.
- The longer, gentler cooking time works best for this lean cut of beef.
- Place the onions beneath the meat so they flavor the broth while helping keep the steak elevated.
- Slice the cooked steak across the grain.
- Cutting against the grain can make the meat seem tough.
- Flank steak is lean, so avoid leaving it uncovered or reheating it for too long.
- If your gravy becomes too thick, whisk in another splash of beef broth.
- Wait until the end of cooking to adjust the salt, especially if you aren’t using low-sodium broth.
FAQs
Do you have questions about this recipe? Here are the answers to the most commonly asked questions for this recipe.
The steak does not need to be completely submerged. One cup of broth creates enough moisture and flavorful cooking liquid while the covered slow cooker traps steam.
Low heat is recommended because flank steak is lean and benefits from gentle cooking. If necessary, you can cook it on high for approximately 4–5 hours, checking that the beef is tender before serving.
Look for the long lines running through the steak. Position your knife across those lines, not parallel to them, and cut the meat into thin slices.

Welcome. I’m glad you’re here. Let me know how you like it!
Bring on the Greek! I was so surprised to find so many Greek restaurants here in Mesa but I am so happy because I love Greek food! Now I can make the tender meat at home, cheaper than take out, and I don’t even have to heat up the grill. This is a plus in the arizona heat when I don’ t want to stand over the grill outside!
The seasoning is so simple, but I know its going to make this so flavorful! I love any crockpot meals… as they are such a timesaver. Im putting flank steak on my grocery list right now!
Flank steak is tasty! I am loving the Greek spin you added to yours! Looks so fall about tender!

Wow Sandra! You’re a supermom! I hope I can be like you in the future! Haha. Working and planning meals for the family every day is no easy feat! And I have to agree! We always take way longer to plan our meals and shopping list than the actual cooking itself! (At least I do!) So this meal planner subscription must be really helpful!
You are so sweet, Sammie! When you love cooking it makes it easier, plus I like to eat good food! LOL YES, having a healthy meal plan at my finger tips is key!!
That flank steak looks amazing in those photos and I’m sure the meal planning service would be good. I agree that I wouldn’t want to pay the money and live on only slow cooker meals. It would be way too limiting for me.
Hi Maureen! One of the moistest flank steaks I’ve made! They have so many plans to choose from and I can switch, but I REALLY like the recipes that have come with the slow cooker menu!
