Substitutions and Additions

If you don’t have cookie wafers, then you can easily substitute the crust in this cheesecake bites recipe for one of the following:

  • Use a different crust: Graham Crackers, shortbread cookies, Oreo chocolate cookies or different flavored wafers (vanilla, strawberry or chocolate). When using a different cookie for the crust, the ratio will remain the same as noted in the recipe card. It’s not necessary to add sugar, but if you want the cheesecake bites extra sweet, then add a couple of tablespoons of granulated sugar.
  • Cream cheese – I use block style full-fat cream cheese, but 1/3 lower fat or Neufchâtel cheese can be used in this recipe.
  • Whipped topping – You can fold in Cool Whip instead of heavy whipping cream. You’ll use about 6 ounces of Cool Whip.
  • Extract – Mix the flavor profile by replacing the vanilla extract with almond extract or flavored extracts like lemon or strawberry extract. Let your imagination go wild!

Tips For Making Cheesecake Bites

  • Room temperature – Make sure the cream cheese is at room temperature for the creamiest cheesecake. I like to open the package and leave in on the kitchen counter for at least a half hour.
  • Cold beaters – Place the beaters or whipping attachment in the freezer before using.
  • Piping bag – Placing the filling in a piping bag or make your own with a Ziploc bag (snipping a corner) for easy placement of the filling over the crust.
  • Refrigerate – Place the prepared cheesecake bites in the refrigerator while preparing the topping. This will set the filling.

  1. I think those wafers make a BRILLIANT crust for the cheesecake! I can’t wait to make them! We do all lemon desserts for Easter so I think I’ll top them with a little fresh lemon preserves!

  2. It appears my first comment didn’t go through. Your little cheesecakes look delicious. I’ve only made the mini ones that you bake. A question, what makes these firm enough to eat when you take the wrapper as that is the way I would want to serve them?

    1. Hi Karen! They are firm when you take the wrapper off. I put them in the refrigerator for about an hour before serving. The heavy cream and cream cheese is stable when whipped together.

  3. Bite size desserts are always my favorite! Just me or do they actually just taste better? 😉 Thanks for the great share I can not wait to try this out!

  4. I LOVE no-bake cheesecake recipes, they are light and fluffy and COLD. Trust me, in Phoenix COLD wins. 🙂
