This keto lemon mug cake is a 5 minute dessert just for one! Enjoy when you want a delicious cake without leftovers tempting you every day. You’ll love the perfect mix of a tart and sweet flavors.

Keto Lemon Mug Cake

Need a sweet treat that is perfect for one serving? Both Alan and I crave sweets, so I’m always looking for ways to keep it under control.

One way to keep dessert snacking at bay is to enjoy small servings by eating what you bake right away. That way we don’t snack endlessly.

If you have tried my low carb carrot mug cake, then you already know that mug cakes are the way to go when you want a quick treat!

Plus, keto mug cakes are actually really filling. I’m certain you will be completely satisfied with this keto lemon mug cake.

What is a mug cake?

A mug cake is a quick and easy single serving of dessert.

It’s called a mug cake because you can mix it and cook it in the microwave right in the cup!

Like I mentioned, mug cakes are a great way to control serving proportions, especially when you are living the Keto lifestyle.

How To Make Keto Lemon Mug Cake

This cake is cooked in a microwave and will be ready to enjoy in just a couple of minitues.

Gather the following ingredients:

  • Almond flour
  • Coconut flour
  • Baking powder
  • Swerve or your favorite sweetener
  • Butter or coconut oil
  • Egg
  • Vanilla extract
  • Lemon

You will need the following kitchen tools:

  • Microwave
  • 8 ounce mug (microwaveable)
  • Measuring cups and spoons

To Make Keto Lemon Mug Cake

The mixing bowl in a mug cake is the the same bowl used in the microwave.

First, whisk together the flours, sweetener, and baking powder.

Second, add the egg, vanilla extract and lemon juice. Once all the ingredients are combined, fold in lemon zest.

Finally, place in the microwave and cook for about 2 minutes.

Now add a dollop of whipped cream or a sprinkle of confectioner’s Swerve.

  • Mug cake with dry ingredients mixed in the cup
  • Mix in wet ingredients to make batter for lemon mug cake.
  • Add lemon zest to cake batter.
  • Here the mug cakes have been microwaved and are done.

Variations

I think the proportions and combination of almond and coconut flour are perfect for this recipe, but this mug cake can be easily adjusted if needed.

You can make it allergen friendly, by switching out flours and adjusting liquid levels with more or less lemon juice.

Just remember that coconut flour requires more liquid than some other flours.

You can also change the flavor completely by using orange instead of lemon or adding other fresh fruits to the cup before cooking.

Can I Use Lemon Extract?

Yes, if you don’t have fresh lemon juice, the you can replace 1/2 teaspoon of extract for the tablespoon of fresh lemon juice.

How do I know when it is done?

When the keto mug cake is done, the top will no longer be shiny and will not stick to your finger when lightly pressed.

You can always test your mug cake for doneness by inserting a toothpick in the center.

If the toothpick comes out clean, the mug cake is done.

Can I Cook This In The Oven?

This treat is meant to be quick and easy, but I realize some people do not like to cook food in a microwave.

As long as your mug is oven proof, then this can be baked at 350°F for 12-15 minutes. Test for doneness the same as explained above.

Alternatively, an 8 ounce oven proof ramekin dish or small baking dish can be used in place of the mug.

Keto Lemon Mug Cake

A forkful of keto lemon mug cake right out of the white mug.

This keto lemon mug cake has the nice tang from the fresh lemon juice and just enough sweetness to enjoy this personalize cake for dessert. Top with whipped cream or a sprinkle of powdered Swerve.

Prep Time 3 minutes
Cook Time 2 minutes
Total Time 5 minutes

Ingredients

  • 3 Tablespoons almond flour
  • 1 Tablespoon coconut flour
  • 1⁄2 teaspoon baking powder
  • 2 Tablespoons granular swerve 
  • 1/4 teaspoon vanilla
  • 1 Tablespoon lemon juice
  • 1 egg
  • 1 Tablespoon butter or coconut oil, melted
  • 1⁄2 teaspoon lemon zest, divided

Instructions

    1. In a microwave safe mug (8 ounce), mix together the almond flour, coconut flour, baking powder and Swerve.
    2. Add the egg, butter, vanilla, lemon juice and half of the lemon zest. Mix until throughly combined.
    3. Sprinkle the remaining lemon zest on top.
    4. Cook the mug cake for 1 1/2-2 minutes or until the top is set and fully cooked.
    5. Sprinkle with powdered Swerve or whipped cream (optional).

    oh cool! I’ve seen lots of recipes for chocolate mug cake but never one for lemon mug cake…that’s more my flavour preference sometimes. Love the bright and citrus-y flavours.

    Hubby and I are doing keto with intermittent fasting. Coming across your recipe, I could not believe my eyes,!     I’ve taken the recipe and put contents into 2 ramikins that way the nutrition for each serving is 2 carbs only rather than 4 for the full dessert. A wonderful dessert very refreshing ty Never have I seen or had mug lemon ty again
