Ready for an easy meatless casserole dish that’s filling and packed with nutrients? You’ve dialed in at the right time because this breakfast casserole is going to wow your tastebuds!

There are basically three ingredients in the casserole; fresh spinach, eggs and cheese!

Not only is this a tasty meal, but it’s simple to make and perfect for low carb and keto diet followers.

In the past month I made this dish twice. Once to serve for brunch, and a second time I cut it up in slices and put them in separate containers for a grab and go meal!

This casserole is meatless vegetarian option, but when craving some extra protein with your breakfast be sure to give this cheesy sausage breakfast casserole or this overnight ham egg casserole a try.

Even without any meat, this casserole dish is packed with plenty of satisfying protein from the eggs and cheese. I used pre-packaged egg whites in this recipe, but only because the egg whites were on sale.

Some people believe that egg whites are better to consume than the whole egg. Egg whites do have less calories than a whole egg, but you are also missing out on some healthy vitamins and minerals.

For that reason I will include an option to use whole eggs in this recipe in the recipe card.

Spinach is also a nutritional powerhouse packed with Vitamin A, K and iron (Popeye approves!).

SPINACH EGG BAKE RECIPE – INGREDIENTS & UTENSILS

Ingredients

  • 16 ounce egg whites plus two whole eggs
  • 2 1/2 cups cheese like Colby or sharp cheddar
  • 10 ounce fresh spinach
  • 1 tablespoon butter
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • salt and pepper to taste

Utensils/Other Items

  • Medium mixing bowl
  • whisk
  • baking dish
  • saute pan

Spinach Egg Bake RECIPE – INSTRUCTIONS

This casserole takes no more than 10 minutes to prepare.

First, in a large skillet melt butter. Saute spinach over medium heat until tender.

In a large mixing bowl whisk together eggs with spices.

Add cooled spinach and cheese and mix until well incorporated. Pour into a lightly greased baking dish and bake!

Cool for 10 minutes before slicing.

Can frozen spinach be used in place of fresh spinach?

Yes, but I would defrost the spinach a day in advance and drain as much liquid as possible before adding it to the egg mixture.

How do you know when the egg casserole is done?

Place a knife in the center of the casserole and if it comes out clean, then it’s ready to be taken out of the oven. For a precise measurement use a thermometer. The temperature should reach 160 degrees.

Can spinach egg bake be made in advance?

Yes! To make this dish in advance, simple follow the directions and once ingredients are in the casserole dish cover and refrigerate. Note that to bake the next day, bring the dish to room temperature (approximately 30 minutes) or be prepared to bake for an extra 15 minutes.

Spinach Egg Bake Recipe

Easy breakfast casserole with spinach and eggs with lots of cheese. This filling entree can be made in advance.

Ingredients

  • 1 16 ounce container egg whites
  • 2 large eggs
  • 2 1/2 cups cheese like Colby or Sharp Cheddar shredded
  • 10 ounce fresh spinach
  • 1 tablespoon butter
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • salt and pepper to taste

Instructions

  • Lightly grease a 9 x 13 inch baking dish and set aside.
  • Preheat oven to 350 degrees.
  • Heat a large skillet over medium heat and add butter. Once butter is melted add fresh spinach. Season with salt and pepper. Cook until wilted and tender (approximately 2 minutes). Remove from heat and cool.
  • In a large mixing bowl whisk together egg whites, whole eggs, Italian seasoning and garlic powder.
  • Fold in 2 cups of cheese with spinach and place in the prepared baking dish. Top with remaining 1/2 cup of cheese.
  • OR place spinach evenly on the bottom of the prepared baking dish and add egg mixture on top followed with the remaining 1/2 cup of cheese.
  • Bake uncovered for 25-30 minutes.
  • To test for doneness, insert a knife in the center of the casserole. If it comes out clean, then it's done. For an exact temperature reading, the thermometer probe should reach 160 degrees.

Notes

You may use 10 whole eggs in place of the egg whites. Add 1/2 cup of milk, heavy cream or half and half.
For thicker slices use a smaller baking dish and increase baking time.

  1. My kiddos LOVE this for breakfast! I make a big batch on Sunday to reheat for fast breakfasts and it’s GONE in NO TIME! It’s also great as an easy filling for a breakfast burrito!!!
