Refreshing pineapple mojito muddled with mint and lime. This is the perfect light cocktail that you will enjoy after working in the garden, sitting poolside or enjoy when you have your next gathering.

Although I’m imagining a big ‘ole summer party at our house, the truth is that Alan and I have been two very recluse individuals.
I mean, we do appreciate our down time, but c’mon already COVID-19 is kicking our social life to the curb.
Even our little family get togethers are not happening. See, we are lucky enough to have our adult kids live nearby and really enjoy their company.
So here we are, just the two of us enjoying these refreshing pineapple mojitos in our courtyard while on Zoom!
You won’t need a lot of ingredients to make this fresh cocktail. It can be assembled in under 5 minutes.

How To Make Pineapple Mojito With Lime
For this cocktail we are using all fresh ingredients. Real fruit, herbs and even a homemade simple syrup.
You will need the following ingredients:
- White Rum
- Club Soda
- Simple Syrup
- Fresh pineapple – learn how to cut pineapple in this post.
- Fresh mint leaves
- Sliced lime
- Ice cubes
You will need the following supplies:
- 8 ounce glasses
- Cutting Board
- Sharp knife
- Measuring cup
- Muddler
Steps to make pineapple mojitos:
First make sure your ingredients are ready and can easily be accessible.
Once you have your ingredients place the pineapple in a glass. I use the glass I will be serving the mojito in, but you could use a cocktail shaker.
How Do I Make Sugar Free Simple Syrup For Cocktails?
You already know that I limit granulated sugar in my diet as much as possible, which also includes my cocktails!
Simple syrup is truly simple to make. It is made with water and sweetener. Usually a 1:1 ratio.
I use monk fruit as a sugar replacement. To make your own simple syrup for this pineapple mojito follow these simple instructions.
Place one cup of water and one cup of monk fruit in a saucepan.
Now over medium-low heat simmer until the sweetener has dissolved. Cool before adding to your cocktail.
NOTE: Monk fruit will crystalize after several hours, so to reuse you will need to reheat the simple syrup for future uses.
What Is A Muddler?
A muddler is a bar tool that is used to release the natural flavors in fruits, herbs and spices to be included in the cocktail.
There are a variety of types of muddlers. Mine is wood with groves on one side to help break up the ingredients.
I can also use the other smooth side of this cool tool on delicate ingredients like blueberries.
In this case, we smash the fresh pineapple, lime and mint leaves releasing as much juice as possible.
To properly muddle as shown in this video start with muddling the pineapple and lime first, then add the mint.
Mint herb is delicate and doesn’t need to be handled with the same force as pineapple and lime.
What can I use in place of a muddler?
If you don’t have a muddler a sturdy wooden spoon or the back of a hard round kitchen tool like a spatula will work just as well.
I find that back on my hand held apple corer works well too.

Pineapple Mojito
Ingredients
- 1/2 cup of fresh pineapple chunks
- 2 slices lime
- 1 spring of mint 8 leaves
- ice
- 2 oz white rum
- 1/2 oz sugar free simple syrup
- 3 oz soda water
Instructions
- In a glass of choice muddle the pineapple and lime until the juice is released.
- Add the mint and muddle a couple more times.
- Add ice.
- Then add rum, simple syrup, and top it off with soda water.
- Stir and enjoy.
