How to Make These Peanut Butter Stuffed Dates

  1. Slice the dates down the center.
  1. Chop the peanuts into pieces.
  1. Place the peanut butter in a piping bag, and then pipe the peanut butter into the center of the date. Top with crushed peanuts.
  1. Melt the microwave in 30-second intervals until smooth, and then drizzle over the top of the peanut butter stuffed dates. Allow to harden before serving.

Substitutions and Additions

  • Instead of using peanut butter, you can also use your favorite nut butter such as almond butter or cashew butter. 
  • Do you have a nut allergy and need a nut-free version? If so, you can use sunflower seed butter and sunflower seeds. There’s no need to chop the sunflower seeds though. 
  • You can use any type of chocolate chips for this recipe. I like to use either milk chocolate chips or rich dark chocolate chips. I think that they give the best flavor. 
  • For a little more flavor you can also top these with a sprinkle of flaky sea salt while the chocolate is still wet for added crunch and flavor. 

How To Store

Store the peanut butter filled dates in an airtight container in the fridge for up to one week. If you can manage to get them to last that long. They disappear quickly in our house.

  • I like to use natural creamy peanut butter. However, you can also use crunchy peanut butter if that’s your preference. I just recommend that you leave the chopped nuts out if you are using crunchy.
  • If you want these dates to taste like healthy Snickers, you can add a small amount of your favorite caramel sauce to them as well. 
  • Don’t worry if you don’t have a piping bag you can use a Ziploc bag or a storage bag with the tip cut off to fill the date cavity.

Ingredients

  • Medjool Dates
  • Peanut butter
  • peanuts chopped – I use Virginia
  • Chocolate chips melted (optional)

Instructions

  • Slice medjool dates lenghwise without slicing in half and remove the pit
  • Chop peanuts
  • Place peanut butter in a piping bag or a plastic sandwich bag with the end snipped off
  • Pipe peanut butter in the center of the date. Top with chopped peanuts.
  • If adding chocolate, melt the chocolate chips in a microwaave in 30 second intervals stirring until the chocolate is creamy. Drizzle over the prepared peanut butter stuffed dates or dip the whole date in the chocolate.
