How to Make These Peach Hand Pies

This is a quick overview of the steps needed to make this recipe. You can find the full recipe in the recipe card at the bottom of this post. 

Step 1: Prep the oven.

Preheat the oven to 375°F. Line a baking sheet with parchment paper and set aside.

Step 2: Prep the peach mixture.

In a medium mixing bowl, fold with a rubber spatula the diced peaches, ½ cup of granulated sugar, lemon juice, vanilla extract, 1 teaspoon of ground cinnamon, and cornstarch until well combined.

Step 3: Roll out the dough on your work surface.

On a lightly floured surface, roll out one dough disk to about 1/8 inch thick. Cut out circles using a 4-inch round cutter.

Step 4: Add the homemade peach filling to the piece of dough.

Place 1 heaping tablespoon of the peach filling in the center of each circle. Fold the dough over to create a half-moon shape and press the edges with a fork to seal.

Step 5: Add the mini pies to a sheet pan.

Place the hand pies on the prepared baking sheet. Repeat with the remaining dough and filling.

Step 6: Add the cinnamon sugar on top of each hand pie.

In a small bowl, mix the remaining sugar and cinnamon together. Brush the tops of the hand pies with the beaten egg and sprinkle with cinnamon sugar.

Step 7: Bake and cool the hand pies.

Bake for 20-25 minutes or until the pies are golden brown and the filling is bubbling. Cool on a baking rack before serving.

Substitutions and Additions

  • You can also swap out the fruit and make blueberry hand pies or apple hand pies with this recipe. 
  • Instead of sprinkling cinnamon on the top, you can also top these with a simple glaze or vanilla icing. 
  • You can also dust the top of your little pies with powdered sugar for a sweet treat.
  • Swap out the vanilla extract for almond extract for a slightly different flavor.

How To Store

Storage – Store the leftover hand pies in an airtight container in the fridge for 2-3 days. 

Freezing – You can freeze these homemade peach hand pies on a baking sheet in a single layer. Once they are hard then move them to a freezer bag to keep them fresh for up to 3 months. Thaw in the fridge overnight.

  • If you are worried about the filling bubbling out of the pies, you can place small slits on the top of the pie. 
  • I used store-bought pie crust because it’s easy, however, if you want to make a homemade pie crust, you most certainly can.

Notes

  • If you don’t have a cookie cutter, a glass or the rim of a bowl will work just as well.
  • Some of the filling may ooze out of the pie during the baking process. This is normal so don’t stress about it.
  • You could also make a simple glaze with powdered sugar and milk for the top of these instead of the cinnamon sugar.
