Simple Chicken Meatloaf Recipe

This chicken meatloaf is a lighter twist on the classic, made with ground chicken, parmesan cheese, breadcrumbs, and seasonings for a tender and flavorful loaf. Topped with a tangy ketchup glaze, it’s a simple comfort food dinner the whole family can enjoy.

Meatloaf recipes are my go-to meals when I want to whole family to gather around the table. It’s hearty, filling and economical dish! Especially when you catch the buy one ground chicken and get one free deal at the grocery store!

I usually make this quick and easy meatloaf using muffin tins or low-carb cheeseburger meatloaf, but I have been playing around with the idea of making a high protein and lower fat meatloaf. Using ground chicken is perfect for this.

  • Ground chicken – I like free-range ground chicken breasts or “extra lean” chicken.
  • Seasonings – These are likely stocked in your pantry; Italian seasoning, pepper, salt, paprika.
  • Breadcrumbs – This helps bind the ingredients together and aid in keeping the meat tender.
  • Eggs – help hold all the ingredients together and add moisture.
  • Milk – add richness and a little fat if you use whole milk.
  • Parmesan cheese – Ohhh, yum. You will love the flavor parmesan adds to meatloaf. Grate your own if you can, but pre-packaged or even the canned version will do.
  • Onion and garlic – This duo is a must and I try to use fresh ingredients.
  • Worcestershire Sauce – adds a savory umami flavor that is common in meatloaf.
  • Condiments – Ketchup and dijon mustard with brown sugar are used for the meatloaf glaze. These flavors have a savory and sweet taste when mixed together.

How To Make Ground Chicken Meatloaf

  1. Combine all meatloaf ingredients in a large mixing bowl. Mix just until ingredients hold together.

2. Place in a greased 9 x 5 loaf pan.

3. Whisk together the ingredients for the glaze; ketchup, dijon mustard, and sweetener.

4. Coat half of the glaze over the meatloaf, and bake at 375°F for 50 minutes. Coat the meatloaf again and bake for an additional 15 minutes.

What To Serve With This Dish

Substitutions and Additions

  • Gluten-Free – use old-fashioned oats or crushed crackers in place of breadcrumbs.
  • Low-Carb – lower the carbs by using golden monk fruit in place of the brown sugar, pork rinds for the breadcrumbs and sugar-free ketchup for the glaze.
  • Glaze Options – try adding your favorite bbq sauce or make your own bbq sauce. Or leave the meatloaf plain and serve a mushroom gravy sauce on the side.

How To Store

  • Storage: keep leftovers in the refrigerator in an airtight container for up to 4 days.
  • Freeze: slice leftover meatloaf and flash freeze by placing on a baking sheet for about 30 minutes. Remove from the freezer and wrap the slices in plastic wrap and put in an air tighter freezer container. Freeze for up to 4 months.
  • Reheating: in the microwave, place sliced meatloaf on a plate covered with a damp paper towel. Use reheat mode for 30 seconds, turning the meatloaf for up to 1 minutes. Repeat if necessary and make sure the towel remains damp. To reheat in the oven, you want to go low and slow. Pre-heat the oven to 250°F place the meatloaf slices on a large baking sheet with a lip. Add a couple of tablespoons of broth or water per slice. Cover with foil and bake for 20-25 minutes.

  • To keep this meatloaf moist, you need a little fat. I like to use full fat milk in this recipe.
  • Don’t over mix the mixture. Mix just to combine the ingredients.

Ingredients

Chicken Meatloaf

  • 2 pounds ground chicken
  • 1 cup plain breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 2 large eggs lightly beaten

  • ½ cup ketchup

Instructions

Preheat Oven and Prepare Loaf Pan

  • Preheat oven to 375°F. Line a loaf pan with parchment paper or lightly grease it.

Mix Ingredients

  • In a large bowl, combine ground chicken, breadcrumbs, Parmesan, onion, garlic, eggs, milk, Worcestershire sauce, Italian seasoning, salt, pepper, and paprika. Mix gently until just combined.

Transfer to Loaf Pan

  • Transfer the mixture to the prepared loaf pan, pressing lightly to shape into a loaf.

Mix Glaze

  • In a small bowl, stir together ketchup, brown sugar, and Dijon mustard. Spread half of the glaze over the meatloaf.

Bake

  • Bake for 50 minutes, then spread the remaining glaze on top. Continue baking for 15 minutes, or until the internal temperature reaches 165°F.
  • Let rest 5–10 minutes before slicing and serving.
