Homemade White Castle (Copycat) Sliders Recipe

  • lean ground beef – You don’t want your beef to render too much fat. 80-90% lean works well for these burgers.
  • water

How to Make This White Castle Sliders Recipe 

Making these copycat White Castle Sliders is so easy. Just follow the step-by-step instructions and you will have tasty mini burgers that taste just like the real thing to share with your family and friends in no time at all. 

Step 1: Dice the onions. 

Dice the onion into small, minced bits (1/4″-1/2″).

Step 2: Cook the onions 

In a medium saucepan, add the oil and turn to medium heat. Add the prepared onion and saute until fragrant and soft (about 3 minutes). Add the water and Worcestershire sauce. Bring to a boil, and then simmer for 8 minutes. Remove from heat and set aside.

Step 3: Shape the meat into a rectangle shape and preheat the oven 

Place the beef on a sheet of parchment paper, flatten the beef with a rolling pin or with your hands shape it into a 1/4″ thick rectangle. Season with salt and pepper. Preheat the oven to 350°F.

Step 4: Cut and shape the individual patties into equal squares.

With a sharp knife or pizza cutter, cut the beef into 12 patties. Using a metal straw or wooden spoon handle, perforate vent holes into each patty. This allows the burgers to be steamed similar to White Castle sliders.

Step 5: Place the square patties on top of the onion mixture on a baking sheet.

On a baking sheet large enough for the ground beef, add the onions and juices from the cooked onions, spreading them out across the entire sheet. Place the patties on top of the onions.

Step 6: Bake the burgers.

Place the baking sheet into the preheated oven, and cover it with a larger baking sheet that’s turned upside down to steam the burgers. Alternatively, you can cover the burgers with a large sheet of foil. Bake for 10 minutes.

Step 7: Assemble the burgers.

When the burgers are done assemble the sliders with a bottom bun, then a burger patty, divide the slices of cheese to fit the patties, then top with 2 pickles, ketchup, and or mayonnaise.

Substitutions and Additions

  • I like to use savory slider rolls for this recipe so that it tastes like the restaurant sliders. However, you can also use sweet Hawaiian rolls if you want a sweet touch to your beef and cheese sliders. 
  • Can’t find slider rolls at your grocery store? Pick up a package of dinner rolls and use those instead. 
  • The White Castle Restaurant uses American cheese slices, so that’s what I used also to get that great taste. But, you can use your favorite cheese. I think cheddar cheese would work great. 
  •  Add some extra toppings to make these sliders even more delicious. Try adding caramelized onions, bacon, or avocado slices on top of the burger patty before assembling everything. You can also experiment with different condiments like BBQ sauce or ranch dressing for a unique flavor twist.

Storage

Storage – Store leftover beef patties in an airtight container in the fridge for 2-3 days. 

Freezing – You can freeze your leftover beef patties by storing them in a freezer-safe bag for up to three months. Just thaw in the fridge overnight before reheating. 

Reheating – The best way to reheat a burger patty is in a skillet on medium heat for 3-4 minutes on each side. You can also reheat them in the microwave for 45 seconds to 1 minute, but be careful not to overcook them and dry them out.

Sliders go well with just about any delicious side dish that your family enjoys. I like to pair them with sweet potato fries or these Chili Cheese French Fries.  But, you could also serve these tasty handheld burgers with your favorite sides such as a side salad, Air Fryer Potato Wedges, or roasted potatoes. 

Sandra’s Pro Tips 

  • I recommend that you use a mix of ground chuck and lean ground beef. This is to give you the best burgers. 73% beef is not a good idea for these sliders because they will shrink too much.
  • If you don’t have another baking sheet the same size to use as a lid, you can also use a piece of aluminum foil stretched tightly across the top of your baking sheet to steam the hamburger meat. 
  • Are you having trouble getting the square shape? A metal square cookie cutter helps you get perfectly shaped beef patties. 
  • And finally, don’t overcook your sliders. They are best enjoyed juicy in the middle. Overcooking will result in a dry and tough burger. 
  • If you find that your burgers are a little dry and you want to add some moisture add a splash of beef broth and reheat them in a skillet.
