Ingredients

You only need a few simple ingredients to make this delicious recipe.

  • Catalina Crunch Keto Cinnamon Toast or Honey Graham Cereal – This cereal adds some texture, which is perfect with creamy cream cheese, and whipped cream. You can also use sugar-free cookies for your base. If you have wiggle room in your macronutrients, graham cracker crumbs work well for this recipe.
  • butter – salted is fine to use.
  • cream cheese – I prefer the full-fat, but you can use light if you prefer.
  • sugar-free confectioners sugar – use your favorite brand. I like Truvia or Swerve brands.
  • Heavy whipping cream – Keep cold until ready to use for the best fluffy peaks. You can use a pre-made whipped topping. You will need a 16-ounce tub. Use a sugar-free brand to keep this keto.
  • vanilla extract
  • fresh strawberries – be sure to discard any bruised or mushy strawberries, and save the prettiest ones for garnishing.

How to Make This Keto Strawberry Cream Cheese Icebox Cake 

This no-bake strawberry icebox cake is so simple to make. Just follow the easy steps below and you’ll have a delicious dessert in no time that your whole family will love. 

Step 1: Crush the cereal into crumbs

Place keto cereal in a food processor and blend until crumbly. Set aside.

Step 2: Make the crust

In a small mixing bowl mix melted butter with 2 cups of the prepared keto cereal crumbs. Save the remaining cup of crumbs for layering.

Step 3: Press the crust into the pan

Add 2 cups of the prepared crumbs to the bottom of a 8 x 8 baking dish. Press the mixture into the bottom of the baking dish. Place in the refrigerator while preparing the cream cheese mixture.

Step 4: Make the no-bake cheesecake filling

In a medium size mixing bowl add the cream cheese and with a hand mixer blend on medium-high until creamy. Add 1 teaspoon of vanilla and gradually add 1/4 cup of sugar-free confectioners sugar. Mix until combined.

Step 5: Make the whipped cream & mix in cream cheese

In a separate large mixing bowl add the heavy whipping cream. On low-speed whip until soft peaks form (4-5 minutes) gradually increasing the speed to medium. Add 1 teaspoon of vanilla and 1/4 cups of sugar-free confectioners sugar. Continue to whip until stiff peaks form (8-9 minutes total).

Fold two cups of the prepared whipped cream into the cream cheese mix.

Step 6: Top the crust with cheesecake filling

Remove the crust from the refrigerator and add 1 cup of the cream cheese mix on top of the crust. Spread forming a single layer.

Step 7: Add sliced strawberries

Place 1 cup of diced strawberries on top of the cream cheese mixture.

Step 8: Top with whipped cream

Top strawberries with 1 cup of the prepared whipped cream. Add the remaining 1 cup of crumbs (reserve 2 tablespoons for garnishing).

Step 9: Repeat the layers

Repeat layers with the remaining ingredients: cream cheese, strawberries, and whipped cream.

Garnish the top of the cake with sliced strawberries and sprinkle crumbs on the top to finish.

Instructions

  • Place keto cereal in a food processor and blend until crumbly. Set aside.
  • In a small mixing bowl, mix in melted butter with 2 cups of the prepared keto cereal crumbs. Save the remaining cup of crumbs for layering.

  • Garnish the top of the cake with sliced strawberries and cereal crumbs.
