I hope your holiday season was filled with all the things that bring you joy.
Sometimes the end of the year leaves me feeling overwhelmed and frankly, exhausted from trying to squeeze everything that I would like to do in the few short weeks that surround Christmas.
This year I told myself, nope, I’m not going to run around like a crazy lady (at least for the holidays!).
I’m going to make an effort to enjoy the season by taking the time to look at the pretty Christmas lights and decorations,
I’m going to watch It’s A Wonderful Life (for the hundredth time) from start to finish. My hubby and I are going to carve out a whole weekend to celebrate our anniversary!
This season, I am going to do the things that make me happy; family-time, runs and workouts that challenge me, good conversations with friends, belly laughs, and partaking in scrumptious foods, of course!
So that’s exactly what I did. I took all the pressure off of myself and let everything just BE.
Instead of baking 12 dozen cookies, I made 6 or maybe it was 8 dozen. The presents still managed to get wrapped, and yummy food served. You get the idea, chillax.
And. It. Has. Been. FABULOUS!
So here I am entering the new year relaxed, refreshed, and happy! AND…I have committed to a 21 day no-junk food challenge! No processed foods, no cakes, candies, ice cream or CHOCOLATE (wha-wha-what?!).
If you’ve made a commitment to eat healthy, this salad is for you! Fresh and delicious. Kind of sweet with the apples, so you feel like you are cheating, but not in a chocolatey kind of way 🙂
Pomegranate, Apple, and Beet Salad
Ingredients
- Five cups of Spring Mix salad
- 2 apples Fuji or Gala cored and sliced (drizzle with the juice of half a lemon to prevent browning)
- 1 cup pomegranate seeds
- 1 package cooked beets sliced (Trader Joe’s sells them)
- 1 Tablespoon orange zest
- ½ cup fresh squeezed orange juice 2-3 large oranges
- 2 Tablespoons extra virgin olive oil
- ¼ teaspoon salt
- ¼ teaspoon pepper
Instructions
- Prepare salad using spring mix, apples, pomegranate seeds, and beets.
- Mix remaining ingredients into a dressing, and drizzle over salad.

I don’t know how or why, but my tastebuds have changed! Beets and mushrooms were on my pass list, but now I love them both!
I would never have thought to mix apple and beets but I bet it is good…especially with the different textures.
