Pomegranate Apple and Beet Salad
Looking for a healthy salad with nice fresh ingredients? This Pomegranate Apple and Beet Salad is light and tasty! Just what you’ll enjoy after indulging in holiday treats!
I hope your holiday season was filled with all the things that bring you joy.
Sometimes the end of the year leaves me feeling overwhelmed and frankly, exhausted from trying to squeeze everything that I would like to do in the few short weeks that surround Christmas.
This year I told myself, nope, I’m not going to run around like a crazy lady (at least for the holidays!).
I’m going to make an effort to enjoy the season by taking the time to look at the pretty Christmas lights and decorations,
I’m going to watch It’s A Wonderful Life (for the hundredth time) from start to finish. My hubby and I are going to carve out a whole weekend to celebrate our anniversary!
This season, I am going to do the things that make me happy; family-time, runs and workouts that challenge me, good conversations with friends, belly laughs, and partaking in scrumptious foods, of course!
So that’s exactly what I did. I took all the pressure off of myself and let everything just BE.
Instead of baking 12 dozen cookies, I made 6 or maybe it was 8 dozen. The presents still managed to get wrapped, and yummy food served. You get the idea, chillax.
And. It. Has. Been. FABULOUS!
So here I am entering the new year relaxed, refreshed, and happy! AND…I have committed to a 21 day no-junk food challenge! No processed foods, no cakes, candies, ice cream or CHOCOLATE (wha-wha-what?!).
If you’ve made a commitment to eat healthy, this salad is for you! Fresh and delicious. Kind of sweet with the apples, so you feel like you are cheating, but not in a chocolatey kind of way 🙂

Wow! What a coincidence! Thanks for commenting 🙂 I’ll be checking out your foodie affair next!!
After all those sweets I ate, it’s a refreshing change!
Beautiful pictures, looks magic…..HAPPY 2013 from Spain, katya:)
Katya! I’m so glad you stopped by! Happy New Year!!
Wish I could stay off chocolate. Actually chocolate is really good for. Love your healthy and colorful salad, so easy to make too.
It is an easy salad to whip up!
Passing on chocolate is not easy, and I already know this will be a short term sacrifice. Chocolate and I are great buddies 🙂
What a gorgeous healthy salad! I can’t get down with beets, though. I know. So uncool. It’s the food I can’t make myself eat. I’m loving the colors here, though! A perfect plate of health! Glad you had a relaxing holiday season!
I don’t know how or why, but my tastebuds have changed! Beets and mushrooms were on my pass list, but now I love them both!
I would never have thought to mix apple and beets but I bet it is good…especially with the different textures.
It’s hearty. More so if I added some chicken! By the way, your shrimp salad was soooo good! I made it with blue cheese for my hubby and I and we both thought it was delicious! 🙂
Looks delicious. You sound refreshed and ready for the new year. Keep it up!
Thanks for stopping by 🙂 Ready or not, 2013 is here!! Lots of goals, but I’ll be taking baby steps.
