  • Bay leaf
  • chili powder – do you like your chili spicy or mild? I like to use Gebhardt chili powder brand. To add more heat you can add cayenne pepper (start by adding 1/4- 1/2 teaspoon).

  • Toppings – onions, sour cream, shredded cheese, or your favorite toppings for serving

How to Make This Slow Cooker Beef Brisket Chili 

Making this recipe is so simple. Just follow the instructions and you will have classic comfort food meal in no time at all. 

Step 1: Add the vegetables, beans, and seasonings to the slow cooker 

Add to a 6 to 8-quart slow cooker, the diced onion, bell pepper, beans, tomatoes, tomato paste, and seasonings; bay leaf, chili powder, ground cumin, garlic powder

Step 2: Sear the brisket (Optional)

Heat a large skillet or Dutch oven over medium-high heat. Add the olive oil. Season the diced brisket with salt and black pepper. In batches, place the brisket cubes into the skillet and sear on all sides until browned.

Step 3: Add the beef to a slow cooker

Place the beef into the slow cooker. Deglaze the skillet with 1 cup of beef broth, scraping the bottom with a wooden spoon to remove any stuck-on pieces. Pour the broth into the slow cooker and stir the ingredients together.

Step 4: Cook the chili

Cover and cook on low for 6 to 7 hours.

Remove the bay leaf and serve with your choice of toppings.

Prefer to cook brisket chili on the stove? Follow these easy instructions.

Step 1: Sear the beef 

Heat a large Dutch oven over medium-high heat. Add the olive oil. Season the diced brisket with salt and black pepper. In batches, place the brisket in the Dutch oven and sear on all sides until browned.

Step 2: Add the vegetables and seasonings

Add the diced onion and saute with the brisket. Add the bell pepper, beans, tomatoes, tomato paste, and seasonings; bay leaf, chili powder, ground cumin, and garlic powder.

Step 3: Add the broth and simmer 

Add the beef broth and bring to a boil. Reduce the heat, cover, and simmer for 3 hours or until the beef is tender.

Step 4: Serve and enjoy 

Remove the bay leaf and serve with your choice of toppings.

What To Serve With This Dish

This chili recipe is filling served at it is, however you may want to serve this with a low carb roll or a buttermilk biscuit.

Substitutions and Additions

  • You can any color bell peppers in this recipe, I used green because they were the cheapest. 
  • If you don’t have a brisket on hand, you could also use a chuck roast to make this chili recipe. 
  • Add more heat to this recipe by adding  1 to 2 tablespoons of ancho chile peppers. 
  • If you like your chili extra smoky, stir in 1 teaspoon smoked paprika or liquid smoke to the mix. 
  • For a bit of sweetness, add 1 tablespoon of brown sugar when adding the vegetables and seasonings. 

How To Store

Storage – Store leftover brisket in an airtight container in the fridge for up to 4 days. 

Freezing –  To freeze, place the chili in an airtight container and store for up to 3 months. Thaw in fridge before reheating. 

Reheating – Reheat individual portions in a microwave safe bowl or reheat the entire pot on the stove over medium-low heat until warmed through. Stir occasionally so that it doesn’t stick to the bottom of the pot.
