Mini Baked Donuts!  I’ve been kind of obsessed with my mini donut pan. Yep, I made another batch of donuts.

These mini bake sweetheart donuts are extra special because they’re decorated just for Valentine’s Day.

Plus these donuts are my favorite size, itty-bitty- adorable!  As you can see, I can’t stop playing with my mini-donut pan!

There isn’t a whole lot to say about these, except when I decided to call them sweetheart donuts a funny story came to mind…

Alan and I had a long distance relationship while we were both in college, our courting years.

At the time, I was going to school on the West Coast and he was East. Talking on the phone was an expense back then that neither one of use could afford, so we wrote a lot of letters to each other during that time.

In fact, I still have them stashed in my garage. I can’t bear to toss them.

Sweetheart or Sweatheart?

There is something about a handwritten letter that makes me swoon. I seriously think it is the most romantic way to show affection.

Your words on paper, the old-fashioned way, not in a text, email, through Facebook or purchased cards like we do now, but thoughts transferred from your head, to pen and paper that is meant just for you.  

Not all our letters were romantic by any means. In some, we would write about what we did over the weekend, and later as an engaged couple, we would exchange pictures from magazines of wedding attire.

Each letter would start with an endearing salutation. He would open with “Hi Sweetie” and I mostly called him babe.

Not too out of the ordinary for affectionate nicknames, but every time I got a letter, he misspelled sweetie.  

At first, I thought, “oh, it’s just a mistake,” but month after month, I kept being called SWEATIE, as in perspiration!  LOL

I was called sweatie for a good 6 months or so, until he realized his mistake and corrected it, but NOT without a GOOD laugh, and of course we told all our family our sweatie story and now you 😉 !! Every once in awhile he’ll write a card “to my sweatie” for smiles!

These sweetheart, not sweatheart 😉 mini donuts are a perfect treat for any occasion, and you’ll definitely see some smiles if you share them.

I used the recipe from the Chocolate mini donuts that I shared last week, but instead of the chocolate chip/rocky road topping, I used Wilton’s baking melts; red and white.

Oh, and sprinkles! Cute festive toppings!

Mini Baked Sweetheart Donuts

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • ¾ cup unsweetened cocoa powder
  • teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • 2 large eggs beaten
  • 2 teaspoons vanilla extract
  • ¼ cup applesauce unsweetened
  • 2 tablespoons oil canola, vegetable or coconut

TOPPING

  • Wilton’s candy coatings red and white (melted according to packaged directions)
  • sprinkles

Instructions

  • Preheat oven to 325 degrees. Lightly grease donut pan or mini muffin pan. Set aside.
  • In a large bowl mix together flour, sugar, cocoa, baking powder, and salt.
  • In a separate bowl, stir milk, eggs, vanilla, applesauce, and oil together.
  • Pour into dry ingredients and mix until blended. Don’t over mix.
  • Using a pastry bag or plastic sandwich bag, pipe dough into prepared pan. Bake 8-10 minutes.
  • Allow to cool for about 5 minutes before removing the donuts from the pan.
  • Dip each donut or mini muffin into the melted chocolate and decorate with sprinkles.

  1. It’s still always nice to go to the mailbox and get a real letter from someone. Since it’s almost a lost art, I always make sure to mail formal “thank You” cards and party invitations. It really does seem to make people’s day when they receive them. These Sweetheart donuts are just so adorable. While I don’t have a special pan, I know my daughter would love a batch for her class.

  2. I love your courtship story, Sweatie, and I agree that the art of letter writing is the best way to tell someone how much you love them. I used to be an avid letter-writer and would receive many letters in return and just loved to walk up to the letter box to see if the postie had delivered anything for me. It’s a shame letter-writing has become almost obsolete xx

  3. Ohhhhh….I love that story Sandra! I agree, emailing, talking on the phone, face time, skype…so many convenient options these days. But nothing melts my heart, too, like written words on paper. It sounds like it was no sweat to make these donuts! (Sorry..I couldn’t resist!). I have a mini donut pan that I have used only once or twice. You are inspiring me to bring it out again. These bitty bites are really lovely and perfect for the day! Hope yours is wonderful! : )
