Banana Bread French Toast Bites

Another use for your banana bread!

What do you do with bananas that no one wants to eat because they’re a little too soft and start to turn brown?  I usually freeze them and put them in my smoothies or make banana bread out of them. It always makes me feel good when I don’t throw away food and we eat exactly what we buy.

Even with those good intentions, I found myself with leftover banana bread that was sitting uneaten for a little too long, which is how Banana Bread French Toast Bites came about.  A quick breakfast with delicious results, and no leftovers! Success 🙂

Banana Bread French Toast Bites

What do you do with leftover banana bread? Make it into French toast! This recipe can be used with any quick bread, so get creative and have something a little different!

Ingredients

  • Leftover banana bread
  • 3 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla
  • 1/4 teaspoon cinnamon
  • butter

Instructions

  • Cut bread into 2 inch pieces and set aside.
  • Whisk together eggs, milk, vanilla and cinnamon in a shallow dish.
  • Over medium-low heat, add butter to a skillet or griddle.
  • Coat bread pieces with egg mixture and place on heated pan. Cook for about a minute or until the bread is golden brown, then turn to cook the second side.
  • Serve hot with your favorite topping.

Notes

This recipe is best with banana bread that is several days old. If you have freshly made bread, you may want to toast the slices in the oven (400 degrees) for about 5 minutes to take some of the moisture out of the bread. The pieces may fall apart if it's too moist when coating with the egg mixture.

  1. Your photos in this post are super! Seems like you’re really getting a feel for how you want things to look. 🙂 I was told recently that my photos were sort of gangsta. Like in your face without being all up in your face. It was meant as a compliment and it made me laugh.
    I love french toast bites!!! I used leftover cream cheese banana bread last year for bread pudding which was great but NOW I have to hope I have some leftover banana bread! These look super, Sandra!

    1. haha! I love your gangsta photos! That is so funny. I really wish I could say, yay, I got this picture thing down, but I don’t. Not at all! Natural lighting in my house is terrible, but I did find one spot that might change things 🙂 Hearing compliments encourages me to keep at it though, so thank you!! The bites are yum! Might be worth it to make an extra loaf just to have french toast with it!
