Oatmeal Brulee Will Wow Your Tastebuds

We snuck in the creme brûlée taste into oatmeal making this an extra special breakfast or brunch entree!

The thin layer of brown sugar caramelized adds a decadent flavor and you don’t need a fancy kitchen torch!

Just put your cooked oatmeal under a broiler for a couple of minutes and holy yum your taste buds will explode!

You’ll never look at a bowl of oatmeal quite the same after you taste it fancied up!

When it comes to oatmeal I’m a purist. I cook it only with water and a pinch of salt, which I still managed in this recipe.

This time I split open a vanilla bean, scraped the seeds into the oatmeal and tossed in the pod while it cooked.

Do you see those little dark specks in the oatmeal? It’s vanilla!

  • 3 cups water
  • 1/4 teaspoon kosher salt
  • 1 1/2 cups quick cooking oats I used Bob’s Red Mill – Gluten Free
  • 1 vanilla bean pod
  • 4 tablespoons brown sugar
  • 1 pint fresh raspberries

Instructions

  • In a small saucepan bring water and salt to a boil. Spit vanilla bean and scrape the seeds into the water with the oats. Add the whole pod for more flavor (optional). Add the oats, reduce heat, and cook for 3-5 minutes.
  • Cover and and remove from heat and let sit until it reaches the consistency you prefer. Remove vanilla pod.
  • Divide the oatmeal among four broiler-proof bowls. Top with 3-4 raspberries, sprinkle 1 tablespoon of sugar over each, and place under broiler. Broil until sugar caramelizes and forms a crust, about 3 to 4 minutes. Watch carefully so sugar doesn’t burn. Serve immediately with cream and additional fruit or topping of your choice if desired.
