I have about a dozen recipes that are in draft form. Some of them are seasonal, like Valentine cut-out cookies that I probably made right after all the lovey-dovey hoopla, so ended up skipping the post. No holding back on this creation any longer! This is a great dish when you want something filling and quick! You can have this on your table in 30 minutes.
- 2 -3 Teaspoons olive oil
- 1/2 cup onion, diced
- 1 lb ground beef, turkey or chicken
- 3 Tablespoons taco seasoning
- 1 can (14.5 ounce) diced tomatoes
- 2/3 cup water
- 2 medium sized zucchini, diced
- 1 medium left over corn
- 2 cups cooked rice
- mozzarella cheese

A few dashes of hot sauce like Tapatio adds more heat and flavor. An icy cold beer would compliment this dish as well. Give it a try!
