Tex-Mex Skillet Recipe
I have about a dozen recipes that are in draft form. Some of them are seasonal, like Valentine cut-out cookies that I probably made right after all the lovey-dovey hoopla, so ended up skipping the post. I have another partial recipe featuring my blueberry bites. I wasn’t happy with the photos, so it continues to sit in the draft bin.
I laughed when I saw this post. I opened the link and saw that I wrote, “I don’t know what to say about this, IT’S LEFTOVERS.” Haha! It’s true. This Tex-Mex Skillet recipe is a quick meal that can be made with leftovers.
No holding back on this creation any longer! This is a great dish when you want something filling and quick! You can have this on your table in 30 minutes.
Ingredients
- 2 -3 Teaspoons olive oil
- 1/2 cup onion diced
- 1 lb ground beef turkey or chicken
- 3 Tablespoons taco seasoning
- 1 can 14.5 ounce diced tomatoes
- 2/3 cup water
- 2 medium sized zucchini diced
- 1 medium left over corn
- 2 cups cooked rice
- mozzarella cheese
Instructions
- In a heavy skillet brown meat on medium-high heat in olive oil with onion. Add taco seasoning and 2/3 cups of water and simmer for about 5 minutes. Remove from pan and set aside. Add a teaspoon of olive oil to the pan and sauté the zucchini until it become tender. Put meat back in the skillet and add the can of diced tomatoes. Add cooked rice and corn. Heat throughly. Add cheese.

A few dashes of hot sauce like Tapatio adds more heat and flavor. An icy cold beer would compliment this dish as well. Give it a try!

I super love scrappy dishes like this. I make things ALL THE TIME with crazy leftovers and old vegetables I forgot were in the drawer. This is a good one! I think i might bounce offa this and make some yummy nachos. MMMMMMmmmmm.

Every culture has recipes to turn precooked (leftover) rice into a totally different and delicious dish.
I have a couple of posts that I just need to trash! Yes, as I was writing this recipe, I was thinking about the similarities with fried rice!
