Biscuits and gravy are probably one of Alan’s favorite meals he enjoys. If we go out to breakfast and the restaurant happens to have it on the menu, then 9.5 times out of 10 he’ll order it. Perhaps it brings back memories from when he lived in South Carolina or he fondly recalls the family gathering for this meal as a young boy. I know he loves it and I rarely make it, so I knew he would appreciate it if I plated this up for his birthday!

This year the celebration happened to be on a Tuesday. That’s right as we’re ramping up our week and our days get a little hectic, but no matter what day it falls on, birthdays are always extra special at our house! So instead of rushing off to work with a smoothie or coffee in hand, I took a vacation day and made him this feast!

He still planned to go to the office, so this meal needed to come together quickly. I got busy in the kitchen and had this ready in about 15 minutes – no joke! The meat and sauce is cooked in the same pan, and to shave a few minutes more off of the preparation time, instead of making my usual buttermilk biscuits, I bought the biscuits. The gravy sauce tastes so delicious you could put it over an English muffin and it would be just as tasty!

I also used turkey breakfast sausage instead of pork, which is a much leaner cut of meat so the calories were reduced significantly. That was important since we needed to save some room for the birthday cake I made from scratch! I scooted him out the door and the flour started to fly! You gotta have cake on your birthday!   • Prepare biscuits if making homemade and set aside.
  • In a skillet cook sausage over medium heat. Stir constantly while breaking up sausage into small pieces. Sprinkle flour over cooked sausage and fold into the meat. Gradually add milk and stir until heated and sauce begins to thicken. When the sauce begins to bubble, reduce heat to simmer. Season with salt and pepper.
  • Split biscuits and top with gravy.
