Roasted green beans wrapped in a slice of bacon topped with onion and a zesty mustard vinaigrette.
YOU WILL NEED: – Fresh green beans – Thick sliced bacon – onion – ground black pepper MUSTARD VINAIGRETTE – extra virgin olive oil – red wine vinegar – grainy dijon mustard
Wash the fresh green beans in a colander under cool water. Trim the ends of the beans with a sharp knife.
Whisk the vinaigrette ingredients together in a small bowl; olive oil, red wine vinegar, mustard, garlic, sugar and salt until incorporated.
Slice the bacon in half. Place a handful of green beans (8-10) in the center of a strip of bacon. Roll into little bundles and place in a 9" x 13" baking pan or baking sheet with the seam side down.
Add the onion slices on top of the green bean bundles and drizzle the mustard vinaigrette on top of the bundles (save a little of baste after cooked). Season with pepper.
