Sausage Stuffed Acorn Squash

Today I’m sharing a scrumptious belly warming meal that quickly comes together in just 30-minutes!

Yes, it’s true! This meal is the perfect time saving nutritious feast for busy evenings for the family, yet it is also an exceptional meal to plate up for guests.  

How To Choose Acorn Squash

Picking the perfect acorn squash is easy if you follow these tips:

  • Pick squash that feels dense and heavy.
  • Choose a squash without soft spots.
  • Dark green squash with some yellow and orange is fine to pick.

Ingredients for stuffed squash

The ingredients used in this recipe are simple:

  • acorn squash
  • sausage
  • vegetables
  • nuts
  • a sprinkle of cheese. 

Nutritious and flavorful foods like this stuffed squash are what need before the holiday treat temptation is in full force!

Simplified Squash Cooking Method

The most difficult part of this recipe is to prepare the squash, and I’ve taken that part and make it super simple.

We all can use some extra hours each day, right?!   Shortcuts that saves precious time is always welcomed, especially with the holidays around the corner.

Breath, friends!  I have you covered.  This is the most festive time of year, so let’s enjoy every second.

Remember the pressure cooker pumpkin puree recipe I shared with you?  Well, the same cooking method can be used to soften up acorn squash or any squash for that matter!

Cook squash in a pressure cooker!

The this recipe the steam builds up the pressure cooker in approximately 10 minutes.

How long does it take to cook the squash? 4 minutes is all it takes!  

While the pressure cooker does its magic, cook the sausage filling.  

In 30-minutes we have a complete meal ready to be served!

So simple, yet quite elegant if you decide to prepare this meal for guests.  I must say that part of the beauty of this meal comes from the presentation.

Sausage Stuffed Acorn Squash

Ingredients

  • 3 Small Acorn Squash
  • 2 teaspoons avocado oil
  • 1 pound Sicilian Chicken Sausage
  • 1 Large Leek sliced
  • 2 Garlic Cloves chopped
  • 4 cups kale chopped
  • 1/3 cup pecans chopped
  • 2 tablespoons parmesan cheese shredded
  • 1/2 cup chicken broth

Instructions

  • Clean acorn squash and cook using the same method as the Pressure Cooker Pumpkin Puree, except cook for 4 minutes.
  • In a large skillet add oil and heat over medium. Add sausage and break up into chunks while cooking for about 5 minutes. Remove cooked sausage from skillet and set aside. Add additional teaspoon of oil and add chopped leek until fragrant and soft. Add kale and garlic. Saute for a minute and then add 1/2 cup of chicken broth. Stir in sausage and remove from heat. Fold in pecans. Place cooked squash on a plate and fill with sausage mix. Sprinkle with parmesan cheese.

Notes

Sicilian Chicken Sausage can be purchased at Trader Joe’s or you can use any seasoned sausage of your choice.
Filling is enough for 8 servings. Serve on the side or enjoy in another meal.
Serve filling each squash or cut squash in half filling each piece.
