It’s been awhile since I shared a dessert, so let’s make up for lost time and indulge ourselves with a creamy cheesecake filling

AND chocolatey brownie!

Hello little joy, joy bites of heaven!

Not only are these brownies delicious, but they are made with some surprising ingredients that are low carb and sugar treats!

I’m estimating that each piece will have about 6 carbs! That’s pretty low for a dessert considering a banana has about 25 carbs!

Whoa! Keto Cheesecake Brownies are lower in carbs than bananas?

It’s true, but remember that bananas has a host of other good for you nutrients.

Also remember that depending on your personal goals and macronutrients, the choice of what to put in your body is yours.

If you are trying to cut the carbs, then choose wisely – lol!

Low Carb Flours For Baking

What you won’t find is any wheat in this dessert. Keto brownies are made with almond and coconut flour, which is excellent for low carb baking!

I also used Truvia in the brownie batter for the sweetener, which tastes delicious!

No icky after taste which just might convince me to use sugar alternatives more often!

How To Store Low Carb Brownies

Keep the brownies in an air tight container and eat within 3 days.

You can also freeze these brownies, by wrapping each cut brownie in saran wrap and putting in an air tight freezable container.

My brownies never make it to the freezer, so let me know if you freeze them and for how long.

Ingredients

Brownies

  • 2 ounces German sweet chocolate chopped
  • 2 ounces Bittersweet chocolate chopped
  • 1/4 cup butter
  • 2 eggs
  • 1/4 cup + 2 Tablespoons Truvia Baking Blend
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1/2 cup almond flour
  • 2 tablespoons coconut flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon kosher salt

Cheesecake filling

  • 8 ounce Cream Cheese light is ok
  • 1/3 cup granulated sugar
  • 1/2 teaspoon vanilla

Instructions

  • Preheat oven at 325 degrees. Grease or line a 8″ baking pan with parchment paper and set aside.
  • Melt chocolate and butter in the microwave (or double boiler) in 20 second increments, and stir until smooth.
  • In a large bowl beat eggs and sugar (Truvia) together. Mix in vanilla and almond extracts. Stir in the chocolate.
  • In a small separate bowl whisk together almond and coconut flours with baking powder and salt. Fold into the chocolate mixture. Reserve one cup of the batter. Pour the remaining batter into the prepared baking dish (batter will be thick and you may need to wet the back of a spoon or your fingers with water to spread the batter evenly).
  • Beat together in a small bowl the cream cheese, sugar, and vanilla until creamy. Spread on top on the brownie mix and then spoon the last cup of brownie batter over the filling. Cut through the batter with a knife and make swirls.
  • Bake for 35 minutes or until filling is set and a toothpick comes out clean when inserted in the brownies. Cool. and refrigerate before cutting.

Notes

Make sure to use Almond Flour not Almond Meal. The flour is made from blanched almonds without the skin. Meal is ground with the skins.

  1. I used a site to analyze and got 10.25 carbs per brownie so I don’t how how someone else got 6. Would like no know how big a square these make when cutting into 16 pieces because if they are fairly small, at over 10 carbs that just doesn’t seem worth it to me. I do think you as the owner of your blog should really be figuring out the carb count for low carb recipes instead of asking others to do so and I’m sure it couldn’t have taken that much extra time.

    1. Hi Carleigh, Thank you for stopping by. You are wrong to assume I have extra time to calculate each recipe, but I don’t think you are really interested in my schedule. I rely on recipe analyzers and report what I find. Not only can the macros vary, but each brand used varies as well. What I provide is a guideline. Hope that clarifies possible variances.

  5. I made these last night and they are AMAZING! and super simple! I am fully Keto, so i switched the sugar to Swerve and the chocolate to 4 oz of lillys dark chocolate chips! Everything else on the list is Keto approved and I loved it! in trying to find more Keto desserts, this helped a bunch for my sweet tooth! Thanks!

  6. I made these and took them to dinner with friends. Ahhhmaaaazing! I substituted Swerve as the sweetener in both the brownie and cheesecake filling. They are chocolatey and delicate. An absolute repeat!

    1. Hello Michele! Compared to a traditional brownie and cheesecake recipe this is a significantly lower carb treat. If this doesn’t fit your preference there are plenty of other recipes that you might consider.

  8. Do you think you could make this with liquid stevia instead of sugar? As in, is the sugar here being used for texture as well as sweetness, or just for sweetness and could therefore be eliminated? Thanks!

    1. Hi MaryLynn! I haven’t tried it, but I think stevia will be a fine substitute for Truvia. It may change the consistency slightly, but it will be just as tasty! Let me know how it turns out!

  9. I’m embarrassed to tell you that I have already made these delicious brownies twice already, in just three days since I found this recipe on Pinterest. I substituted the eggs for 2 Tablespoons of ground Flax, and 6 Tablespoons water, and instead of the sugar, I used granulated Swerve. They baked up perfectly. This is my go to recipe for something sweet.

        1. I’m guessing you didn’t edit because I copied exactly the recipes and happy forks said almond extract was an actual almond and used it for measurement. They also used chocolate sauce instead of bittersweet chocolate chips among other things that weren’t correct so not exactly accurate at all unless you edit it yourself. I used another site to do so and these came out to about 10.25 carbs per square and seeing as these make 16 brownies in such a small pan, I’m betting they’re pretty small squares.

  12. Hmmm I am so intrigued – I have never baked with coconut flour, but I think I want to try that. I don’t do low-carb or gluten-free, but I do want to avoid artificial sweeteners and all-purpose flour where I can. And baking with coconut flour just sounds tasty doesn’t it? Great brownie recipe, they look so tasty.

    1. Since you are a scientist you’ll love investigating about how to bake with coconut flour. You really can’t use it as a one for one swap with all-purpose flour, but when you mix it with another flour like rice or almond it works beautifully!

    1. Yes, coconut flour requires a lot of moisture. It sucks it up like a sponge, so you need to add more moisture like eggs! You’ll love experimenting with coconut flour, Nicky! Give these brownies a try!
