Baked Donut Recipe With Cake Mix

I used to keep a hardy stock of boxed cake mix in my pantry when my kids were in high school.

They both had cake events; Ashley had Cake Friday, a Thursday evening bake-a-thon, and Sam’s did Funfetti birthday cake celebrations for all his group’s birthdays.

It was economical (especially since I paid for the ingredients), and fool proof!

Delicious tasting cakes every time, plus they had so much fun with their creations!

Boxed cakes are GREAT  when you just want an easy recipe.

That was the case when at 10:00pm I decided to make a mini donut tower for Sam to enjoy the morning of his birthday!

Mini Donut Tower

Earlier in the week Sam told me how last year his birthday SUCKED and gave me a list of why it wasn’t a good year.

That kid tugs my heart strings, so I wanted him to start this birthday year festive and fun!  

Baked Donut Birthday Cake Tower is anything but SUCKY, right?!!

This mini donut tower turned into a mix of mini muffins and donuts because my donut pan only bakes 12 at a time and the muffin pan can double that amount.  

Like I mentioned, it was already late at night when I began this project!

I had a spice cake mix in my pantry, so my creation had Fall flavors.

The glaze is a maple flavored topping. You can use any flavored cake mix and any brand.

I’m pretty sure he had a great birthday! We didn’t see him for 3 days since his social calendar was packed!

That was fine with us. Alan and I celebrated with Apple Pie Moonshine.

Ingredients

  • 1 box cake mix I used spice
  • 1 stick butter melted and cooled
  • 2 large eggs
  • 1 cup milk
  • for Icing
  • 1 cup powdered sugar
  • 1/2 teaspoon maple extract or
  • 1 teaspoon vanilla extract
  • 1 to 2 tbsp heavy cream or milk
  • Sprinkles

Instructions

  • Preheat oven to 350 degrees and spray mini donut and muffin pans with cooking spray.
  • Add all ingredients to a large mixing bowl and beat with hand mixer as directed on cake mix.
  • Pour donut batter into a piping bag or ziploc bag (snip off the end) and pipe donut batter into pans. Bake for 8-10 minutes. Remove from oven and after 5 minutes remove from pan and let cool completely.
  • Whisk together powdered sugar, maple extract or vanilla and one tablespoon at a time milk or cream. You may adjust with more milk or powdered sugar until you reach your desired consistency of glaze. Dip half of donut into frosting, then cover with sprinkles and let sit until dry.
  • In a circular pattern place first layer of donuts on a flat surface. Keep adding layers decreasing the amount until you top the tower with one mini muffin or donut.

I’m sure I tweaked from the original recipe because that’s what I do.

  3. Oh Sandra…this is so awesome. I know exactly what you mean when you say that Sam tugs at your heartstrings, because my son does the same thing to me. I mean, I could wring his neck 23 out of 24 hours a day because he knows exactly what buttons to push… but I love that boy. I love this tower of donuts and muffins! I had to laugh, because you sound just like me… It would have been a tower of muffins, donuts, and cookies just to get it done in a decent amount of time! I love this.. <3
