My son and daughter were both home, so I was in mom heaven planning and then putting together a brunch for our family. We had ham, an egg casserole, yogurt parfaits, mixed fruit, coffee cake, cookies, and asparagus to name a few of the dishes. Oh, and mimosas! You can’t have a brunch without mimosas!!

It was definitely a filling feast that we thoroughly enjoyed. We had fabulous sunny weather too, so we were outdoors in our courtyard soaking up some vitamin D! 

Today it’s time to put aside the peanut butter eggs, and leave that chocolate bunny’s ear intact (the ears are first to go!) for a protein rich Peanut Butter Berry Smoothie.

Low in calories and filling, this smoothie is a great breakfast supplement or my favorite time to drink a smoothie is right after a workout!

I added raspberries, banana and a peanut butter powder to this smoothie. If you aren’t familiar with peanut butter powder, give it a try! It has the peanut butter flavor we all love, but it’s lower in fat and calories than regular peanut butter (45 vs. 190 calories) because they squish the fatty oils out and don’t add anything extra like preservatives. 

Pretty awesome and tastes delicious in smoothiesI have only tried the PB2 brand, but there must be other to sample as well.

Ingredients

  • 1 cup water or Almond milk unsweetened
  • 1 serving vanilla protein powder
  • 2 tablespoons peanut butter powder I used PB2 or 1 tablespoon peanut butter
  • 1/2 banana frozen
  • 1 cup raspberries
  • 1/2 – 1 cup ice optional

Instructions

  • Put all ingredients in a blender and pulse until blended. Enjoy!

    1. We don’t live close to most of our extended family, so it’s so nice when we get my immediate family to spend the holidays together. I’m addicted to smoothies! Love them 🙂
